Baked Cottage Cheese Pancakes

  1. If the tvorog is wet, squeeze out excess moisture; if grainy, blend or press through a sieve
  2. Soak raisins in hot water for 5 minutes, then drain well
  3. Mix tvorog, eggs, sugar, salt and vanilla until smooth
  4. Add flour (start with 120 g) and mix just until soft dough forms
  5. Fold in raisins
  6. Shape into balls (~60–70 g each), flatten slightly and dust the outside with flour
  7. Place on a parchment-lined baking sheet
  8. Bake at 180°C / 350°F for 15 minutes, flip, then bake another 8–10 minutes until golden
  9. Optional: broil for 2–3 minutes at the end for extra color
  10. Serve warm with sour cream, yogurt, honey or berries
