Baked Cottage Cheese Pancakes
Ingredients
- 1 kg Tvorog / Cottage cheese / Farmer cheese
- 2 eggs
- 120–150 g All-purpose flour
- 80–120 g Raisins
- 80–120 g Sugar (to taste)
- Pinch of salt
- Vanilla (optional)
Instructions
- If the tvorog is wet, squeeze out excess moisture; if grainy, blend or press through a sieve
- Soak raisins in hot water for 5 minutes, then drain well
- Mix tvorog, eggs, sugar, salt and vanilla until smooth
- Add flour (start with 120 g) and mix just until soft dough forms
- Fold in raisins
- Shape into balls (~60–70 g each), flatten slightly and dust the outside with flour
- Place on a parchment-lined baking sheet
- Bake at 180°C / 350°F for 15 minutes, flip, then bake another 8–10 minutes until golden
- Optional: broil for 2–3 minutes at the end for extra color
- Serve warm with sour cream, yogurt, honey or berries
